Baked Oatmeal

Our very first time going on tour in September, we stayed with our first billets in Saskatchewan. They made us the BEST breakfast ever. It was called Baked Oatmeal. At first we thought it was like a cake or a muffin, but it was oatmeal! And it was sooo good. Usually I don’t like oatmeal. But this was amazing. A beautiful start to our tour! We definitely got the recipe for that one.

This past week our team was really craving baked oatmeal. So we got all the ingredients and made it for our day off. It was wonderful! It tasted like tour. You know how some things can really remind you of something? Like a certain smell can remind you of your grandma’s house, or a certain song can bring you back to when you were 7 years old? Well baked oatmeal took us back to our first day of tour. I would HIGHLY recommend it J

Ingredients

·        3 cups rolled oats

·        1 cup brown sugar

·        2 teaspoons ground cinnamon

·        2 teaspoons baking powder

·        1 teaspoon salt

·        1 cup milk

·        2 eggs

·        1/2 cup melted butter

·        2 teaspoons vanilla extract

·        3/4 cup dried cranberries

Directions

1.    Preheat oven to 350 degrees F (175 degrees C).

2.    In a large bowl, mix together oats, brown sugar, cinnamon, baking powder, and salt. Beat in milk, eggs, melted butter, and vanilla extract. Stir in dried cranberries. Spread into a 9x13 inch baking dish.

3.    Bake in preheated oven for 40 minutes.

(Then we put a bit of milk and brown sugar on it. Yum!!)
